Taken from Betty Crocker's cookbook several years ago. Recipe also called for 2 slices of bacon.

Recipe Ingredients for Spring chicken

16 oz chicken breast, meat only
4 roma tomatoes
1 yellow pepper
1 green pepper
12 oz italian dressing, fat-free

Recipe Directions for Spring chicken

Quarter the tomatoes and slice the peppers into strips. Cook the chicken until white on all sides and starting to brown on one side. Turn the browing side up and add the tomatoes and peppers. Pour in the italian dressing and simmer, covered for 20 minutes.
