Recipe Ingredients for Spring Asparagus Pasta

2 teaspoons virgin olive oil
1 tablespoon butter or margarine
1 clove garlic, minced
1 small red onion, chopped
2 cups fresh asparagus, cut at a diagonal into one-inch pieces
16 oz Spaghetti, Whole Wheat
1/3 cup shredded parmesan cheese
1 Salt and pepper to taste

Recipe Directions for Spring Asparagus Pasta

  1. Heat oil and butter or margarine in a saute pan over medium-high heat. Addd garlic and onion. Cook for about 2 minutes, until slightly softened.

  2. Add asparagus and cook until fork tender, about 4 to 5 minutes.

  3. Add asparagus mixture to pasta and toss. Sprinkle with parmesan cheese while warm, and serve immediately.
