Spicy (not hot) Indian style curry

Recipe Ingredients for Spouted Lentil Curry with Cilantro Ginger Sauce

2 serving Lentils, Sprouted
1/2 cup chopped raw Vidalia Onion
6 clove Garlic
2 tbsp Coconut Oil, Unrefined, Organic
1 tbsp Curry Powder
0.5 tsp Cloves, Ground
2 cup Coriander Leaves
1 lemon yields Lemon Juice
1 tsp Sea Salt
3 serving Hemp Oil
2 cup (8 fl oz) Water

Recipe Directions for Spouted Lentil Curry with Cilantro Ginger Sauce

  1. About 3 cups of sprouted lentils and 3 cups of sprouted wheat, or another 3 cups of sprouted lentils (not packed down)

  2. 2 tablespoons of coconut oil or olive oil

  3. 1 onion, chopped

  4. 3 garlic cloves

  5. 1 tablespoon curry powder

  6. 1/2 teaspoon ground cloves

  7. 2 cups of water

  8. 1-In a large saucepan with a lid, heat oil over medium high heat until hot, but not smoking. Add onions and cook while stirring for about 4 minutes, until the onion is starting to soften. Then add the garlic, curry powder and cloves and cook for about 30 seconds longer and add the water.

  9. 2-Then add the lentils (and optional wheat, if using). Bring to a simmer with the lid on, then lower heat. Steam for 15-20 minutes until soft. If just using lentils, you can steam for even a little less.

  10. 3) Rinse millet and place in a dry skillet on medium heat (stirring frequently to prevent burning) for about 4 min). Add 2 cups water and simmer on lower heat for about 20 minutes (stirring regularly)

  11. Meanwhile, make your cilantro sauce.

  12. 1 bunch of cilantro, stemmed and washed

  13. A heaping teaspoon of grated fresh ginger (peeled)

  14. 3 small garlic cloves, peeled and cut into small chunks

  15. 1 lemon juiced

  16. 3 tablespoons hemp oil

  17. 1 teaspoons salt

  18. Place all ingredients in food processor and pulse until everything is well combined and it?s at the consistency you want.

  19. Serve the curried lentils over cooked millet with a big spoonful of your cilantro sauce on top and enjoy.
