delicious anytime, great for breakfast with 1 or 2 tablespoons maple syrup

Recipe Ingredients for Spoonbread

2 cups water
1 cup cornmeal
1 tsp salt
1 cup buttermilk
4 eggs
2 tbsp butter, softened

Recipe Directions for Spoonbread

  1. mix 1 cup cold water into cornmeal

  2. boil 1 cup water and salt

  3. stir in the cornmeal mixture

  4. cook one minute and remove from heat

  5. beat eggs, butter, buttermilk and stir into the hot mix

  6. spray 1 1/2 quart casserole with Pam

  7. pour in the cornmeal mixture

  8. bake at 400 degrees for 40 minutes or until knife or toothpick come out clean
