Moist breakfast cornbread with custard topping

Recipe Ingredients for Spoon Bread

2 cups 2% milk
2 large eggs
4 tbs butter
1/4 cup White Wine Vinegar, Organic
2 tbs sugar
1 cup flour
3/4 cup cornmeal
1 tsp baking powder
1/2 tsp baking soda
1 cup heavy cream

Recipe Directions for Spoon Bread

  1. Preheat oven to 350 and place an ungreased glass dish on rack 1/3 from bottom of oven to heat.

  2. Melt 2 tbs of butter and wisk together will all wet ingredients and sugar.

  3. In a separate large bowl, wisk together all remaining ingredients except butter.

  4. Add wet ingredients to dry ingredients and wisk until smooth and lumps are gone.

  5. Place the remaining 2 tbs butter (melted) into the preheated glass dish and tilt to coat sides.

  6. Scrape batter into dish and slowly pour cream over top.

  7. Bake 45-50 minutes or until toothpick inserted into center comes out clean.
