Cakey batter on top over and egg custard. Clever chemistry stuff too which fascinated me as a child.

Recipe Ingredients for Sponge Custard

2 oz margarine
2 oz caster sugar
2 oz self raising flour
210 ml 1% milk
2 large eggs
1 oz caster sugar

Recipe Directions for Sponge Custard

  1. Cream margarine and 2oz sugar together.

  2. Add the egg and beat.

  3. Fold in the flour.

  4. Spread the batter over the bottom of a greased ovenware thing, about 6" squareish.

  5. In a new bowl beat the egg and 1oz of sugar together.

  6. Warm the milk and add to the egg and sugar.

  7. Pour over the batter.

  8. Cook at 350F (Gas Mark 4) for 20 minutes.
