Recipe Ingredients for Sponge Cake (Delia Smith; 12 servings per cake)

4 oz. self-raising flour
1 tsp. baking powder
4 oz. butter
4 oz. granulated sugar
2 large eggs
1/2 tsp. vanilla
4 oz. butter
8 oz. icing sugar
1/2 cup raspberry jam

Recipe Directions for Sponge Cake (Delia Smith; 12 servings per cake)

  1. Preheat oven to 325 F.

  2. Lightly grease two 7" cake pans then line with lightly greased parchment/wax paper.

  3. Sift flour and baking powder into a large mixing bowl.

  4. Add 4 oz. butter, 4 oz. sugar, eggs and vanilla and mix well (preferably with electric mixer).

  5. Pour batter into prepared cake tins and bake on center shelf of oven for about 30 minutes.

  6. Cool in pans for 30 seconds only then cool on a wire rack.

  7. To make icing, beat together butter and icing sugar.

  8. Use jam to sandwich cake together then top with butter icing.
