Really easy recipe! Takes about one hour total prep and cook time or you could set it up to do in a crock pot while you're at work.

Recipe Ingredients for Split Pea and Turkey Sausage Soup

16 oz dried lentils
6 cups water
1 T. olive oil
1 medium onion, diced
4 cloves garlic, minced
10 oz. turkey sausage, diced and cooked (I prefer the smoked kielbasa-style sausage of Hillshire Farms)
1 tsp. salt
2 tsp. bullion, vegetable or chicken
1/2 tsp. pepper
1/2 tsp. coriander

Recipe Directions for Split Pea and Turkey Sausage Soup

  1. Boil water and add lentils. Bring to a boil then simmer for 20-30 minutes or until almost tender.

  2. Add salt, bullion, pepper and coriander to lentils and continue to cook on low heat.

  3. In the meantime, saute sausage, onion, and garlic in the olive oil until mixture is light golden brown. Add to lentils and cook for another 20 minutes or so on low heat so the lentils break down and soften more and all the flavors can blend.
