Split Pea soup with barley and without ham.

Recipe Ingredients for Split Pea Soup

1 tablespoon olive oil
1 cup onion
1 tbsp,+crumbled bay leaf
3 cloves garlic
2 cups split peas
1/2 cup barley
1 1/2 teaspoon salt
2 cups carrots
2 cups celery
1 1/2 cups potato
1/2 cup parsley
1/2 teaspoon dried basil
1/2 teaspoon dried thyme

Recipe Directions for Split Pea Soup

  1. In a large pot over medium heat Saute the oil, onion,bay leaf and garlic for 5 minutes.

  2. Add the peas, barley, salt and water. Bring to a boil then lower heat and simmer for two hours stirring occasionally. (Add more water as needed.)

  3. Add carrots, celery, potatoes, parsley, basil, thyme and black pepper. Simmer for an additional hour, or until vegetables are tender.
