Hearty & Healthy Split Pea Soup. (There's lots of fiber in this, so go easy on the quantity if your body is not used to high fiber foods.) The amount of water used & number of servings are approximate and vary depending on desired thickness and serving size. (I like "thick" soup.) The type of ham used is not too significant. Smoked ham has a good flavor, but a little liquid smoke could probably be used for a similar flavor.

Recipe Ingredients for Split Pea Soup

4 cups split peas, green, dry
8 cups water
2 cups chicken broth
6 oz Fully Cooked Smoked Ham
5 carrots, medium
1 onion, yellow, large
1 celery stalk, large
3 cloves garlic
2 T olive oil, extra virgin
1 tsp,+crumbled bay leaves
1/8 t cayenne pepper
1/4 t pepper, black
1/4 t chili powder

Recipe Directions for Split Pea Soup

  1. Wash peas

  2. Combine water, peas, chicken broth, bay leaves (whole or crumbled), peppers (black & cayenne) and chili powder in large soup pot. [Note: I don't measure, so I'm guessing at the qty for the spices.]

  3. Bring to a boil, then reduce heat (medium - medium low) and simmer with lid slightly ajar. Meanwhile ...

  4. Dice ham and set aside.

  5. Dice vegetables (carrots, onion & celery) and set aside.

  6. Peal and chop garlic and set aside.

  7. After about 20 or 30 minutes (when peas are beginning to soften and break apart), heat olive oil in a large saute pan over medium heat.

  8. Add diced vegetables to pan and saute, stirring occasionally, until vegetables begin to soften but still have firmness and individual flavors (10-15 minutes)

  9. Add garlic and saute for 3 minutes.

  10. If whole bay leaves were used in the soup, remove them.

  11. Add vegetables and ham to soup pot, stir well, and let simmer for another 30 minutes.

  12. --During this time, adjust thickness (add some water), if desired. Taste periodically and adjust spices (salt, pepper, cayenne, or whatever), if needed.
