Recipe Ingredients for Split Pea Soup

2 c dried split peas
2 quarts water
1 lb ham shank
1 c celery, minced
1 medium onion, finely chopped
1 sprig parsley
1/4 t pepper

Recipe Directions for Split Pea Soup

  1. Heat peas and water to boiling;; boil gently 2 minutes. Remove from heat; coverf and let stand 1 hour.

  2. Add remaining ingredients. Heat to boiling. Reduce heat and simmer 2 1/2 to 3 hours or until peas are very soft.

  3. Remove bone; trim meat from bone andd add to soup. If desired, thin with milk or water. Season to taste.
