Split pea soup is one of my family favorites it goes well with sourdough. You can eat it with "Alvarado St" sprouted sourdough and not feel like you are making a bad food choice or enjoy on its own. It makes about 11 cups (1 serving =1 cup). So lots of leftovers and it freezes well. Another bonus is that it is easy to make and is very filling. One thing to consider is that if you freeze it and cook it over the stove you might need to add water so the calorie count will be less :-)

Recipe Ingredients for Split pea soup

2 lbs dry split peas
1 large onion
2 tbs olive oil
2 bouillon cubes
10 cups water
1 tbs salt
1 tbs italian seasoning

Recipe Directions for Split pea soup

  1. Wash peas

  2. Chop onion

  3. Add olive oil to a large pot

  4. heat on med low and add onion and cook until transparent

  5. add bouillon cubes (can be vegetable, chicken or beef) and spices and mix

  6. add dry split peas

  7. add water

  8. once you get a slow boil, turn to low heat and cover

  9. stir frequently

  10. after about 1 hour you can make it smoother by blending it with a hand mixer

  11. It should be ready in 1.5-2 hours
