Split Pea Soup without the ham and lots of veggies

Recipe Ingredients for Split Pea Soup

1 lb green split peas, dried
10 cups water
132 g celery
1/2 tsp tarragon, dried
2 tbsp unsalted butter
2 cups carrots, sliced
1 cup onions, diced
3 leeks, sliced
1 salt to taste
1/2 tsp black pepper

Recipe Directions for Split Pea Soup

Bring water and rinsed green split peas to a boil and then add the celery and tarragon. Simmer partially uncovered for 45min. Separately, melt the butter and add carrots, onions and leeks. Cook 10 min until wilted. Add to pea mixture and continue boiling for another 30min. Add pepper and salt to taste.
