Recipe Ingredients for Split Pea Soup

8 cups chicken broth
2 cups dried peas
1 medium onion
3 carrots
3 stalks celery
1 tblsp olive oil
2 tablespoons ground flaxseed

Recipe Directions for Split Pea Soup

  1. Heat the olive oil in a large pot.

  2. Dice the onion, carrot and celery and add to the pot, seasoning with salt and pepper.

  3. Saute the vegetables on low heat 5-10 minutes until they are soft but no color.

  4. While those are cooking, wash the peas and drain.

  5. When the vegetables are soft, add the chicken broth and bring up to a boil.

  6. Season with salt, pepper, rosemary and thyme to taste, add the flaxseed and stir well.

  7. Simmer on low heat 2-3 hours or until the peas are tender.
