Split Pea Soup with ground turkey instead of ham

Recipe Ingredients for Split Pea Soup

8 oz green split peas
2 teaspoons butter
36 oz low sodium chicken broth
8 oz fresh asparagus
3 oz carrots
1 medium onion
6 oz ground turkey
2 oz fresh parsley
1 teaspoon salt

Recipe Directions for Split Pea Soup

  1. Add butter (or olive oil) to large pan over medium ? high heat.

  2. Stir in onions and aparagus.

  3. Cook until onions are translucent (should only take 2-3 minutes).

  4. Add carrots, parsley, salt, split peas, and College Inn low sodium, reduced fat chicken broth to pan.

  5. Stir.

  6. Bring to boil.

  7. Simmer for 20 ? 30 min, or until lentils are al dente.

  8. Start browning turkey in a skillet set to medium-high heat. Add seasonings of your choice.

  9. Scoop 1 - 2 cups of soup out of pan and set aside.

  10. Pour the rest of the soup into a blender.

  11. Blend for 30 seconds - 1 min.

  12. Pour blended soup back into pan.

  13. Add soup that was set aside back into pan and stir. This will give soup a nice texture.

  14. Add in ground turkey, stir soup, and enjoy.
