Low Fat soup that can be totally vegetarian.

Recipe Ingredients for Split Pea Soup

16 oz dried split peas
4 cups chicken stock
1 cup water
1 cup carrots
1 cup celery
2 large onions
3 cloves of garlic
4 tablespoons lemon juice
1 tablespoon butter

Recipe Directions for Split Pea Soup

  1. Soak peas overnight

  2. Cook onions, celery, carrots and garlic in 1 tablespoon low fat butter.

  3. Add peas, broth and water and bring up to a boil.

  4. Reduce to a simmer till peas are cooked(18-20 minutes)

  5. Ladle out about half the soup and blend in a blender until smooth.

  6. Return back to the pot and add lemon juice, lemon zest and any seasonings you prefer(salt, pepper, paprika)
