Vegetarian version of split pea soup

Recipe Ingredients for Split pea soup

1 c onion, diced
1/2 c carrot, sliced
3 cloves of garlic, minced
1 tbsp olive oil
1 cup split peas , sorted and rinsed
4 cups water
1/2 cup white wine

Recipe Directions for Split pea soup

  1. Saute the onions, carrots, and garlic in the olive oil until beginning to brown. Add salt, pepper and rosemary to taste.

  2. Add the water and wine, and turn up the heat.

  3. Rinse the split peas and add to soup.

  4. Bring to a boil, stirring frequently.

  5. Once boiling, reduce to a simmer. Cook for 30 min to 1 hour until peas are tender, stirring once in a while. Add more water if necessary.
