Recipe Ingredients for Split Pea Soup with Lemon

2 tsp olive oil
1 large onion, Spanish, chopped
1/2 lb carrots, peeled, quartered and sliced
1 tsp tarragon
1 lb split peas
10 cups chicken stock
2 tbls lemon juice
1/2 tsp salt

Recipe Directions for Split Pea Soup with Lemon

  1. heat oil, add onion and cook covered till golden, about 15 minutes

  2. add rest except lemon juice and salt- dook partially covered until peas have fallen apart, about 2 hours

  3. After 1 hour check to see if you need to add more stock - if so, add 2 cups

  4. Remove from heat and add lemon juice, then salt to taste.
