Recipe Ingredients for Split Pea Soup with Lemon and Brown Rice

2 tsp olive oil
1 large onion, Spanish, chopped
1/2 lb carrots, peeled, quartered and sliced
1 tsp tarragon
1 lb split peas
10 cups chicken stock
2 tbls lemon juice
1/2 tsp salt
1/2 cup brown rice, instant

Recipe Directions for Split Pea Soup with Lemon and Brown Rice

  1. saute onions, add rest except rice, lemon juice and salt.

  2. Cook partially covered about 2 hours until peas are cooked, then add the instant rice. Cover and cook for about 10 more minutes Add lemon juice and then salt to taste.
