Fast, easy soup. Do not need to soak the dried peas so this is very quick for a hearty soup.

Recipe Ingredients for Split Pea Soup, Cheap, Healthy and Quick

4 carrots
4 stalks celery
1 sweet onion
2 tbsp minced garlic
1 lb dried split peas
2 tblsp olive oil

Recipe Directions for Split Pea Soup, Cheap, Healthy and Quick

  1. Saute onion, garlic and celery in olive oil

  2. Rinse peas

  3. Add 8 cups water, peas and carrots to pot with onion, garlic and celery.

  4. Add bay leaf, pepper and salt to taste

  5. Bring to boil and simmer for at least 45 min. Better for about 1 1/2 hours. Keep hear low so it just simmers.
