Recipe Ingredients for Split Pea, Lentil, Barley Soup

1.5 1tsp Vegetable Oil, Canola
0.5 medium (2-1/2" dia) Onions
1 tsp, crumbled Bay Leaf
2 clove Garlic
5 oz Green Split Peas
2 oz Barley
2 oz Lentils, Mature Seeds
1 medium Carrots
32 fl oz Organic Low Sodium Chicken Broth
2 cup (8 fl oz) Water
0.25 tsp Parsley, Dried
0.25 tsp, ground Basil, Dried
0.25 Teaspoon Thyme
0.25 tsp Pepper, Black

Recipe Directions for Split Pea, Lentil, Barley Soup

  1. 1.In a large pot over medium high heat, saute the oil, onion, bay leaf and garlic for 5 minutes, or until onions are translucent. Add the peas, barley, salt and water. Bring to a boil and reduce heat to low. Simmer for 2 hours, stirring occasionally.

  2. 2.Add the carrots, celery, potatoes, parsley, basil, thyme and ground black pepper. Simmer for another hour, or until the peas and vegetables are tender.

  4. In a slow cooker, layer every ingredient except the broth in order listed (do not stir). Boil broth, then add to slow cooker. Cover and cook on high for 4-5 hours or until vegetables are tender.Discard bay leaves before serving.
