Basic Vegan Soup with a bunch of protein...and not much fat :)

Recipe Ingredients for Split Pea Barley Soup

1 cup onion
1/2 cup carrots
1/2 cup celery
1/2 cup potato
1 cup split peas
1/4 cup barley
8 cups of water
1 teaspoon olive oil
4 grams bay leaf
4 grams basil
4 grams oregano
10 grams garlic
1/2 cup tomato
1 tablespoon vinegar

Recipe Directions for Split Pea Barley Soup

  1. Heat the oil in a big pot.

  2. Add the chopped onion, carrots, celery and potato.

  3. Saute until onion is translucent.

  4. Add the crushed garlic and cook another minute.

  5. Add the peas, barley, water and spices.

  6. Bring to a boil then simmer, covered tightly till peas are soft and mushy.

  7. Check occasionally and stir to make sure you have enough water :)

  8. Once done, stir in chopped tomato and the vinegar.

  9. Add some salt and pepper if you want!
