Recipe Ingredients for Split Pea and Bacon Soup

1 tbsp Butter
4 oz Bacon
1 large Onions
1 carrot (7-1/2") Carrots
1 stalk, large (11"-12" long) Celery
16 oz Split Peas
5 cup Chicken Stock

Recipe Directions for Split Pea and Bacon Soup

  1. Heat the butter in a saucepan, add the bacon, and cook until the bacon is crispy. Remove the bacon and stir in the onion, carrot, and celery. Cook for 2-3 minutes.

  2. Add the rinsed split peas followed by the stock. Bring to a boil, stirring occasionally, then cover and simmer for about one and a half hours.

  3. Turn off the heat and puree with an immersion blender on low until you get a chunky consistency. Add the bacon back in.
