Spinich mushroom white cheddar quiche (crustless)

Recipe Ingredients for Spinich mushroom white cheddar quiche (crustless)

2 tablespoon olive oil
10 ounce frozen chopped spinach, thawed and drained
10 eggs, beaten
20 ounces shredded white cheddar cheese
2 cups sliced mushrooms
2 tablespoon chopped garlic
1 teaspoon salt
1/4 teaspoon ground black pepper

Recipe Directions for Spinich mushroom white cheddar quiche (crustless)

  1. Add oil to large pan on medium-high heat and saute garlic about 1 minute. Add mushrooms and cook until reduced in size, about 5-7 minutes. Reduce heat to medium-low. Add drained spinich and cook until liquid evaporates, about 5 minutes.

  2. Beat eggs in a large bowl, add shredded cheese, salt and black pepper.

  3. Mix in spinich mushroom mix into egg cheese mix.

  4. Put 1/4 cup muffin pans (need 2, 12 count muffin pan).

  5. Cook at 400 for 30 minutes.
