Recipe Ingredients for Spinachy Shells Florentine

2 c. lowfat cottage cheese
30 oz. frozen spinach
3 eggs
1/4 c. flour
1/2 tsp. salt
1 1/2 c. cheddar cheese, shredded
1 c. reduced fat mozzarella cheese, shredded
12 oz. pasta, jumbo shells
24 oz. pasta sauce

Recipe Directions for Spinachy Shells Florentine

  1. Thaw spinach.

  2. Mix cottage cheese, eggs, flour, and salt.

  3. Add spinach and cheddar cheese.

  4. Boil pasta.

  5. Cover large casserole dish with half of pasta sauce.

  6. Stuff shells with spinach mixture and line in casserole dish.

  7. Cover with remaining pasta sauce, then mozzarella.

  8. Cover with foil and bake at 375 for about 40 minutes.
