Light spinach frittata, can be served with salsa

Recipe Ingredients for Spinache Frittata

10 oz frozen spinach
1/2 onion
2 garlic cloves
1/2 c nonfat evaporated milk
2 eggs
3 egg whites
1/2 c lowfat mozzarella cheese

Recipe Directions for Spinache Frittata

  1. Saute onion and garlic with cooking spray. Cook 3-5 minutes.

  2. Cook spinach and completely drain.

  3. Add spinach to garlic & onion.

  4. Beat eggs, egg whites & milk.

  5. Pour egg mix over vegetables.

  6. Cook on stove top 5-10 min until almost set.

  7. Top with Cheese & Finish in 350 degree oven for 5-7 minutes.
