Crustless spinach, mushroom, red pepper quiche

Recipe Ingredients for Spinach&Bacon Quiche

4 whole eggs
1 egg yolk
1/2 cup cream
6 oz. light cream cheese
3 oz. shredded mozzarella cheese
2 oz. grated Parmesan cheese
4 oz. bacon
4 oz. turkey breast
1 large onion
1 large red pepper
1 lb mushrooms
10 spinach leaves
2 tbsp olive oil
4 cloves of garlic
1/2 tsp salt
1 tsp black pepper
2 tsp red pepper flakes

Recipe Directions for Spinach&Bacon Quiche

  1. Chop all ingredients in small dice.

  2. Brown bacon bits in a skillet and set aside on paper towels. In same skillet add 2 Tbsp of olive oil and saute vegetables.First onions with red pepper flakes, then red bell pepper and mushrooms, garlic, spinach, salt, pepper. Add turkey breast.

  3. In a blender mix cream cheese, eggs and cream.

  4. Pour the egg mixture into cooled sauteed mixture, add mozzarella cheese and combine, then pour into a previously oiled baking dish. Top with bacon bits and Parmesan cheese. Bake at 350 F for about 1 hr.
