1 1/2 cup brown rice, uncooked
4 cups water
4 cups spinach
3 green onions
1 large red pepper
1 cup carrots, chopped
3/4 tbsp olive oil
1 tsp marjoram

Recipe Directions for Spinach, yellow pepper and brown rice pilaf-style risotto

Chop and sauté carrots, yellow or red pepper and green onion in well heated olive oil; add rice for one minute or until slightly translucent. Add water, spices and a bay leaf. Can be served as a healthy side dish or with added beans and peas of your choice for a complete vegan dish.
