Easy vegan dish, and easy to modify

Recipe Ingredients for Spinach, yellow pepper and brown rice risotto

4 cups water
1 1/4 cup brown rice, uncooked
1 cup carrots, chopped
2 1/2 cups spinach, shredded
1 cup leeks, chopped
1 yellow pepper, chopped
1 cup kidney beans
1 cup frozen peas
1 tsp marjoram
1 tsp curry
3/4 tbsp olive oil

Recipe Directions for Spinach, yellow pepper and brown rice risotto

Chop vegetables and sauté in well heated olive oil (it will spread so you need less). Add short grained brown rice for less than a minute. Add water and spices and one bay leaf and simmer covered for 60 minutes. Add peas and beans towards the end of cooking so that they are only heated through. Mix, fluff, and serve.
