Wild mushrooms and fresh spinach with white cheeses in crispy quiche

Recipe Ingredients for Spinach and Wild Mushroom Quiche

8 serving Mixed Wild Mushroom
2 cups Baby Spinach
8 large Egg, Whole
1 crust, single 9" Pie Crust, Standard-type, Prepared From Recipe, Baked
4 serving Fancy Shredded Swiss Cheese
3 oz Shredded Mozzarella Cheese
1 tbsp Onions, Dehydrated Flakes

Recipe Directions for Spinach and Wild Mushroom Quiche

  1. Soak dried wild mushrooms in hot water for 10-15 minutes. Rinse well.

  2. Prepare crust in 9" pie pan.

  3. Wilt the spinach in a sautee pan (optional).

  4. Sprinkle 1/2 the two cheeses in the bottom of the pie.

  5. Layer the spinach over the cheese and begin sauteeing the softened wild mushrooms.

  6. While mushrooms are cooking, crack eggs into a bowl and beat until slightly fluffy. Add onion flakes and salt and pepper to taste.

  7. Layer the mushrooms over the spinach and top with the rest of the cheese.

  8. Poor egg mixture over all.

  9. Bake approximately 45 minutes at 375 until top is golden.

  10. (Note: mushrooms, cheese and spinach will rise to the top. Egg mixture will expand and rise so do not overfill pie crust).

  11. Serves 8-10.
