Spinach and White Beans Recipe

Makes 5 servings



Pasta sauce with spinach and white beans. Tomatoe-based sauce, but can be used with or without pasta.

Recipe Ingredients for Spinach and white beans

750 g plum tomatoes, chopped
10 oz frozen chopped spinach
30 g kalmata black olives
70 g small yellow onion
1/2 red bell pepper
3 cloves garlic
1 tbsp capers, drained
1/4 tsp thyme
1/4 tsp red pepper flakes
1/2 tsp oregano
1/2 cup dry white wine
430 1/2 g One can great northern beans, rinsed and drained

Recipe Directions for Spinach and white beans

  1. Thaw and drain frozen spinach. Squeeze out excess water and set aside.

  2. Sautee onions and red pepper until soft.

  3. Drain tomatoes and save liquid. Crush and or chop 1 can of plum tomatoes. Add liquid and tomatoes to the sauteed vegatables and combine.

  4. Add the other ingredients, except wine and beans. Stir until incorporated. Bring to a simmer.

  5. Add wine. Stir and simmer for at least 15 minutes.

  6. Add the beans just before serving.

  7. Makes 4 servings.
