Spinach and White Bean Soup Recipe

A hearty soup to satisfy those winter cravings. Adapted from another recipe to make it healthier.

Recipe Ingredients for Spinach and White Bean Soup

880 grams Cannellini; if canned, low sodium and rinsed
6 cup Spinach
1 tbsp Olive Oil
3 medium (4-1/8" long) Onions, Spring Or Scallions, chopped
1 tbsp Lemon Juice, Canned Or Bottled
3 clove Garlic, minced
1 tbsp Parmesan, Grated Cheese
411 grams (1 can) Natural Goodness Chicken broth 33% less sodium
1 stalk, medium (7-1/2" - 8" long) Celery, chopped
1/4 tsp Spices Crushed Red Peppers

Recipe Directions for Spinach and White Bean Soup

  1. Chop the celery, then saute in the olive oil for about 5 minutes or until tender. Add scallions (chopped) and garlic (minced or crushed) and saute for about another minute.

  2. In a large sauce pan, combine the can of chicken broth, celery mixture, beans, and both kinds of pepper. Bring to a boil and let simmer for about 15 minutes.

  3. Remove about half of the soup mixture and blend/food process until smooth and creamy, then pour back into pan.

  4. Add the spinach and stir until spinach is bright green and wilted. If you don't like spinach 'strings', roughly chop the spinach before adding it.

  5. When spinach is done, add parmesan cheese and lemon juice, stir for another minute, then serve immediately. If you can spare the calories, it's also good with toasted italian bread and extra parmesan cheese on top. Each serving is one cup of soup.
