Recipe Ingredients for Spinach & Veggie Omelet

2 large egg Eggland's Best Egg
0.5 serving Extra Virgin Olive Oil
1 cup Spinach
26 grams Peppers, Sweet, Yellow
0.13 cup Reduced Fat 4 Cheese Mexican Shredded Cheese

Recipe Directions for Spinach & Veggie Omelet

  1. Chop and wash veggies

  2. saute veggies in 1/2 of the EVOO for 2-3 minutes. Remove veggies and set aside

  3. Beat 2 large eggs until fluffy

  4. pour into med-high heat pan

  5. Once eggs start to set add veggies

  6. fold over eggs into 1/2 moon shape. cook until done

  7. top with shredded cheese

  8. S&P to finish
