Spinach, tuna, pinenuts and leeks with whole wheat rotini

Recipe Ingredients for Spinach Tuna Pasta

1 T. olive oil
1 leek, diced
12 oz. whole wheat rotini
10 oz frozen spinach, drained
4 oz. canned mushrooms, drained
4 oz. canned tuna, drained
1 oz. pine nuts, toasted
3 T. grated parmesan cheese
3 T. lemon juice

Recipe Directions for Spinach Tuna Pasta

  1. Cook pasta in salted water as package directs. Drain, retaining several cups of pasta water.

  2. Toast pine nuts.

  3. Saute leek in olive oil. Add rest of ingredients and some pasta water to make sauce. Combine with drained pasta.
