A delicious tortellini tossed in a thick, creamy alfredo sauce. This is a largish meal by itself, so use small sides or adjust the portions

Recipe Ingredients for Spinach Tortellini Alfredo

2 1/2 cups spinach cheese tortellini
1/4 stick butter
1/2 cup of finely grated parmesan

Recipe Directions for Spinach Tortellini Alfredo

  1. cook the tortellini according to package directions

  2. while straining the pasta, take the pot off of the heat

  3. melt the butter in the pot

  4. add the parmesan to the melted butter just before the butter melts

  5. stir quickly for 5-10 seconds, or until a muddy consistancy is reached. The pot is hot at this point, and you don't want the cheese to melt into clumps.

  6. add pasta back to pot and stir until some sauce is on each piece

  7. serve
