Good refreshing salad for the summer; thrust quenching and filling without being heavy.

Recipe Ingredients for Spinach and Tomato Salad

4 cups Organic Baby Spinach
1 cup, chopped or sliced Tomatoes, Red, Ripe
1/4 cup chopped Scallions
2 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
3 tablespoon Pumpkin Seeds
12 g lemon yields Lemon Juice
1 tbsp Olive Oil
0.13 tsp Pepper, Black
1 dash Salt, Table
1/2 fruit without skin and seeds Avocados
1 tbsp Parmesan, Grated Cheese

Recipe Directions for Spinach and Tomato Salad

Mix all ingredients except avocado and cheese in a large bowl and toss with lemon and olive oil to dress. Plate and add the avocado and grated cheese to top.
