This colorful, flavorful omelet packs two servings of vegetables. Now that's starting your day off right!

Recipe Ingredients for Spinach & Tomato Omelet

1 tsp canola oil
1 tomato, diced
1 scallion, sliced
1 cup baby spinach, washed
1/2 cup liquid egg substitute
1/4 cup reduced-fat Cheddar cheese, shredded
1/8 tsp salt
1/8 tsp black pepper
1 tbsp water

Recipe Directions for Spinach & Tomato Omelet

  1. Spray a small nonstick skillet with cooking spray, add oil, and heat over medium-high heat.

  2. Add tomato and scallion and cook, stirring once or twice, until softened, 1-2 minutes.

  3. Place spinach on top, cover and let wilt, for 30 seconds.

  4. Stir to combine.

  5. Pour in egg substitute, reduce heat to medium-low and continue cooking, stirring constantly, until the egg is starting to set, for 20 seconds.

  6. Continue cooking, lifting the edges so the uncooked egg will flow underneath, until mostly set, for 30 seconds more.

  7. Sprinkle cheese, salt and pepper over the omelet.

  8. Lift up an edge of the omelet and drizzle the remaining 1 tablespoon water under it.

  9. Cover, reduce heat to low and cook until the egg is completely set and the cheese is melted, for 2 minutes.

  10. Fold over using the spatula and serve.
