Another off of AllRecipes.com - I am a huge fan of any pasta dish, and this one is an excellent meatless entree. Substitute any whole wheat pasta for a truly healthy option.

Recipe Ingredients for Spinach Tomato Linguine

8 ounces uncooked linguine
3 cups plum tomatoes, seeded and chopped
10 ounces frozen chopped spinach, thawed and squeezed dry
1/2 cup green onions, chopped
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon garlic salt
4 ounces feta cheese, crumbled

Recipe Directions for Spinach Tomato Linguine

  1. Cook linguine according to package directions.

  2. Meanwhile, in a large nonstick skillet, saute the tomatoes, spinach and onions until tomatoes are softened.

  3. Sprinkle with salt and garlic salt.

  4. Reduce heat. Stir in feta; heat until warmed.

  5. Drain linguine; toss with tomato mixture. Serve immediately.
