I needed some additional protein for the day, so I added lentils to the same recipe.

Recipe Ingredients for Spinach Tomato Linguine with Lentils

8 ounces uncooked linguine
3 cups plum tomatoes, seeded and chopped
16 ounces frozen spinach, chopped, thawed and squeezed dry
1/2 cup green onions, chopped
1 tablespoon olive oil
2 cloves garlic, minced
4 ounces feta cheese, reduced-fat, crumbled
14 ounces canned lentils, drained and rinsed

Recipe Directions for Spinach Tomato Linguine with Lentils

  1. Cook linguine according to package directions.

  2. Meanwhile, in a large nonstick skillet, saute tomatoes, spinach, onions, garlic and beans in oil until tomatoes are softened.

  3. Reduce heat.

  4. Stir in feta; heat until warmed.

  5. Drain linguine; toss with tomato mixture.

  6. Serve immediately.
