Easy delicious way to use up leftover cooked rice.

Recipe Ingredients for Spinach, Tomato, Black Olives and Feta Quiche w/ brown rice crust

2 cups Rice, Brown, Medium-grain, Cooked
1/4 cup All Natural Cheese
1 1/4 cup Egg Beaters
1 cup skim milk
1 cup Cottage Cheese, Lowfat, 2% Milkfat
10 oz frozen spinach
1/3 cup black olives
1 cup chopped tomatoes
1 cup Feta Cheese

Recipe Directions for Spinach, Tomato, Black Olives and Feta Quiche w/ brown rice crust

Mix rice, 3T cheese and 1/4 c eggbeaters in bown. Press rice mixture into 9in pie plate and up sides. Bake in preheated 450deg oven for 5-7mins, until just starting to turn golden brown. Mix remaining eggbeaters, milk, vegetables, cheese and garlic, salt and pepper, parsely/dill, nutmeg or other spices. Pour egg mixture into pie crust. Bake preheated 400 deg oven until golden brown and set in the ctr, about 35-45mins. Other good veggie combo--asparagus, black olives and feta. Broccoli, green onions and cheddar cheese.
