Recipe Ingredients for Spinach Tofu Scramble Wraps

3 tbsp olive oil
1 medium red potato, diced small
1 medium red onion, diced small
1 cup bell peppers, diced
4 oz. frozen spinach, chopped
2 veggie sausage patties
10 oz. extra-firm tofu
8 tbsp tofu scrambler
10 flour tortillas

Recipe Directions for Spinach Tofu Scramble Wraps

  1. Heat 2 tbsp oil in a wok over medium heat. Saute onions, peppers, and potato until potato is tender.

  2. Microwave sausage patties and chop.

  3. Add sausage and spinach to onions, peppers and potato.

  4. In a medium bowl, crumble the tofu and add the tofu scrambler seasoning.

  5. When the onions, peppers, potato, sausage and spinache is heated through, transfer to another bowl.

  6. Heat 1 tbsp oil in wok and add the tofu mixture. Cook for about 3 minutes, turning occasionally.

  7. When tofu is heated through, return everything else to the wok and combine thoroughly.

  8. Heat a tortilla in a pan or in the microwave for about 15 seconds.

  9. Add 1/2 cup tofu scramble to a tortilla and wrap.

  10. Enjoy!
