Recipe Ingredients for Spinach & Sweet Pea Manicotti

12 pieces Manicotti
10 oz Spinach
2 serving Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
1 clove Garlic
15 oz Whole Milk Ricotta
0.75 cup Frozen Sweet Peas
2.5 cup Mozzarella Shredded
1/4 cup leaves, whole Basil, Fresh
0.75 tsp Kosher Salt
0.25 tsp Pepper, Black
0.75 cup Milk, Producer, Fluid, 3.7% Milkfat
1 serving Heavy Whipping Cream
6 oz Fontina Cheese

Recipe Directions for Spinach & Sweet Pea Manicotti

  1. Preheat the oven to 400 degrees F. Greast a 13 by 9 glass backing dish liberally with butter.

  2. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 6-8 minutes. Drain the pasta and set aside.

  3. Chop spinach leaves into 1inch pieces. In a large nonstick skillet, heat the oil over medium-high heat. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for another minute. Add the spinach and cook, stirring constantly, until wilted, about 2 minutes. Allow the mixture to cool slightly. Place the ricotta, peas, 1 cup mozzerella, 3/4 cup parmesan, 1/4 cup basil leaves, salt, and pepper in the bowl of a food p rocessor. Add the colled spinach mixture and blend until smooth. Spook the mixture into a ziplock back with a corner cut out. fill the manicotti shell with the filling. Place the stuffed manicottie in the prepared backing dish.

  4. In a medium saucepan, bring milk and cream to a simmer, over medium heat. Reduce heat to low. Add the fontina cheese and remaining parmesean and basil.

  5. Pour the sauce over the manicottie and sprinkle with remaining mazzarella.

  6. Bake for 30-35 minutes until the top is golden . Cool for 5 minutes before serving.
