Spinach & Sun-Dried Tomato Stuffed Chicken

Recipe Ingredients for Spinach & Sun-Dried Tomato Stuffed Chicken

2 cloves garlic, minced
2 T bread crumbs
1 T olive oil
1/2 c onion, chopped
1/2 c spinach, chopped
1 T basil, dried
1 T parsley, dried
2 tsp oregano, dried
1 tsp nutmeg
8 oz chicken breast
1 tsp romano cheese, grated
1 tsp paprika

Recipe Directions for Spinach & Sun-Dried Tomato Stuffed Chicken

Sautee onions in olive oil. Defrost & drain spinach. Remove as much water as possible. Combine all but last 3 ingredients. Stuff into a flattened chicken breast. Use toothpicks to secure if necessary. Place seam-side down in baking dish. Top with romano & paprika & bake 425 for 20 mins. Serves 2. Remove toothpicks before serving.
