Spinach stuff shells with Basic Red Sauce

Recipe Ingredients for Spinach Stuffed Shells

12 ounces pasta shells
28 ounces whole tomatoes
28 ounces tomato sauce
7 tsp. tomato paste
2 tsp. olive oil
1 small onion, chopped
1 tsp. garlic, minced
1 cup water
1 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. pepper
1 tsp. salt
1/2 tsp. sugar
32 ounces ricotta cheese, part skim milk
2 cups mozzarella cheese, part skim milk, shredded
1 cup parmesan cheese, grated
2 eggs
10 ounces spinach, steamed

Recipe Directions for Spinach Stuffed Shells

  1. Cook shells according to package directions. Rinse with cold water and drain.

  2. Sauce: Saute onions and garlic in olive oil under translucent. Add all other ingredients and allow to simmer for 30 minutes until thickened.

  3. Combine ingredients for stuffing and stuff shells with approximately 1.5 T. each.

  4. Layer sauce and shells in 13x9 baking dish. Sprinkle shredded mozzarella over top. Bake at 375 degrees for 30-45 minutes or until cheese is melted and slightly browned.
