Spinach Stuffed Potato Recipe

Baked, then gutted potato with spinach, corn and some onion mashed together then stuffed back in to the empty Tater shell.

Recipe Ingredients for Spinach Stuffed Potato

2 medium Russet Potatoes
1 bunch Spinach
1 large ear, raw Corn Sweet
2 tbsp chopped Onions
2 tbsp Extra Virgin Olive Oil
0.75 tsp Sea Salt
3 dash Pepper, Black

Recipe Directions for Spinach Stuffed Potato

  1. bake potatoes

  2. chop onion, cut corn off ear, combine and put in evoo in cast iron skillet,

  3. cut up spinach

  4. take out done potaoes

  5. cut open and use spoon to get all inside potato out

  6. mix it in with spinach, corn and onion

  7. sprinkle with salt and pepper

  8. mix a little water in to make the potato "creamy"

  9. use spoon to put mixture back in potatoes

  10. serve
