Note: The first ingredient is actually "12 dried jumbo shell macaroni." I had to rename it to get the calories.

Recipe Ingredients for Spinach-Stuffed Pasta Shells

2 cups macaroni
10 ounces frozen chopped spinach
2 eggs
8 ounces Italian cheese
1 cup Ricotta cheese
32 ounces pasta sauce

Recipe Directions for Spinach-Stuffed Pasta Shells

  1. Cook pasta according to package directions; drain. Rinse pasta with cold water; drain again. Set aside. Meanwhile, drain thawed spinach well, pressing out excess liquid.

  2. For filling, in a medium bowl beat eggs. Stir in spinach, 1.5 cups of the Italian cheese blend, and the Ricotta cheese. Spoon a rounded 2 tbs. of the filling into each jumbo shell. Place shells into 2-quart square baking dish. Pour pasta sauce over shells.

  3. Bake, covered, in a 350F oven for about 40 minutes or until heated through. Sprinkle with remaining 0.5 cup Italian cheese blend before serving.
