Manicotti shells stuffed with a cheese and spinach mixture that can be served with a sauce.

Recipe Ingredients for Spinach Stuffed Manicotti

8 oz pasta shells
20 oz frozen chopped spinach
2 tbsp finely chopped onion
2 tbsp butter
1 egg, beaten
15 oz ricotta cheese
8 oz parmesan cheese,grated.

Recipe Directions for Spinach Stuffed Manicotti

  1. Boil the manicotti shells in salted water about 7-8 minutes, or until "al dente", rinse in cold water, drain, and set aside.

  2. Cook frozen spinach according to package directions, drain well, dry between several layers of paper towels.

  3. Saute onion in butter until tender, but not brown.

  4. In a mixing bowl, combine spinach, egg, ricotta, parmesan, and onion mixture.

  5. Transfer the stuffing mixture into a 1 gallon Zip-lock storage bag and seal. Cut a small opening in the bottom corner of the bag about the size of the end of the manicotti shell.

  6. Squeeze a portion [about 1/4 cup] of the mixture into each manicotti shell until full.

  7. Spray a large 13.5X9.5X2 inch baking dish with cooking spray, and place the stuffed manicotti shells about 1/2 inch apart. Two baking dishes may be needed.

  8. Cover the baking dish(es) with foil and bake in a 350 degree oven for 15 minutes.

  9. Serve with prepared spaghetti sauce.
