Pounded Chicken Breasts Stuffed with Spinach, Walnuts, & Parmesan

Recipe Ingredients for Spinach Stuffed Chicken

20 oz. frozen spinach
2 tbsp minced garlic
1/2 onion
3/10 cup chopped walnuts
28 g fresh parmesan cheese
20 g mozzarella
4 chicken breast
2 tbsp olive oil
1 tsp black pepper
1 tsp salt

Recipe Directions for Spinach Stuffed Chicken

  1. Sautee onions in 1/2 the olive oil until translucent.

  2. Mix spinach, chopped walnuts, parmesan, onion, and garlic in large bowl.

  3. Season to taste with salt & pepper.

  4. Pound chicken breasts to 1/2 inch thick.

  5. Drop spoonfuls of spinach mixture onto chicken and roll.

  6. Secure with toothpicks if necessary.

  7. Bake at 375 for 30 minutes, or until chicken is done and spinach mixture is bubbling inside.

  8. Serve with Ronzoni Smart Pasta tossed with remaining olive oil, salt & pepper.

  9. Enjoy!
