Recipe Ingredients for Spinach-stuffed chicken in apricot sauce

10 ounce frozen chopped spinach, thawed
1/2 cup low fat cottage cheese
1/3 cup dry breadcrumbs
1 tablespoon minced shallot
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon nutmeg
1 large egg white
2 chicken breast, bone and skin removed
1 tablespoon vegetable oil
1 cup apricot nectar
1 tablespoon tarragon vinegar
2 teaspoons brown sugar
2 teaspoons dijon mustard
6 apricots

Recipe Directions for Spinach-stuffed chicken in apricot sauce

  1. Press spinach between paper towels until barely moist. Combine spinach and next 7 ingredients in a bowl. Cut chicken breasts in half. Cut horizontal slit through each breast half to form a pocket. Divide spinach mixture evenly among pockets. Cover and chill stuffed breast halves 1 hour.

  2. Heat oil in large nonstick skillet over medium-high heat. Add chicken and cook 6 minutes on each side or until chicken is done. Remove from pan; keep warm.

  3. Combine nectar, tarragon vinegar, brown sugar, and mustard in saucepan. Bring to a boil. Reduce heat to medium and cook 7 minutes. Add apricot wedges and cook 5 minutes or until sauce thickens. Serve warm over chicken.
