Yummy spinach cheese soup with mushrooms

Recipe Ingredients for Spinach Soup

7 oz Spinach
5 tbsp Butter
4 oz Mushrooms
1/4 cup chopped Scallions
0.417 cup Wheat Flour, White, All-purpose, Enriched, Bleached
2 cup Chicken Broth
2 cup Milk, Lowfat, Fluid, 1% Milkfat
0.5 tsp Salt, Table
4 oz Cream Cheese
1 cup, shredded Gruyere Cheese

Recipe Directions for Spinach Soup

  1. Cook the spinach.

  2. Melt butter in a large saucepan and sautee diced mushrooms and scallions until tender.

  3. Add flour and stir until flour is cooked.

  4. Whisk in chicken broth, then milk; stir until thickened.

  5. Add salt, cream cheese, and gruyere; stir until melter.

  6. Very gently, stir in spinach

  7. Season to taste, serve hot.
